Focaccia Pizza


Foccacia pizza a very delicious suggestion from my co worker Ileana I am glad I took her advice yum!!!!!
1. Prepare a foccacia bread dough recipe and spread dough onto a greased cookie sheet.
2. Dice 5-6 tomatoes place in sauce pan adding a 1/2 cup olive oil and a dash of Thyme, Oregano, and Rosemary seasoning.
3. Heat on medium setting until tomatoes turn into a saucy type of mixture add some diced onions and garlic along with some pepper.
4. When sauce has becomes sort of thick remove from heat and allow to cool.
5. Remove your dough from refrigerator spread cooled sauce onto dough sprinkle wit sharp Cheddar cheese mixed with a little Mozzarella and Parmesan and your favorite toppings.
6. Cook at 450 degrees until crust becomes a golden brown color.

Standing on the edge of a waterfall over looking a lake standing tall


silhouettes of clouds ripple out across the surface tall trees morphing out in the distance


feeling free with the ancient sound as the waters crashes and resounds


thunder rolls out across in the atmospheric ceiling my vision is lost


taken back at the beauty to behold silent drops of rain dimple the images perceived in my brain


upon this majestic storm listening to this earthy song my mind lingers on into a lost world of perception where imagination controls every image of the young and old


spirits ride on the whispering wind there thoughts slowly slipping through the clouds past across the sky a magical moment and I am just along for the ride


so deliciously familiar but all to similar a recollection of my past


at the waters edge I am lifted through the sands of time I am sifted out across the surface of the water my visions are drifted along with my moods which are uplifted.

Forgotten Words




Whispering winds whistle through the trees in a cold january breeze


the full moon is glimmering high in the sky with all the stars shimmering in my eyes


flecks of snow fall down collecting on the ground without making a sound


mysterious meadows of snow pure while collecting in the suns orange glow


forever falling forgotten spring when it arrives the m ajestic birds will sing


seeds we will sow to harvest in end of summers glow.


take me away oh take me away the seasons will pass becoming just a memory at last


rolling tumbling waves on the beaches turning of the oceans currents churning toward me


renewing lifes great mysterys. we are humbled by your greatness mother earth let us live on in your warm embrace holding true to strive for peace in you there is glory and existence that we have yet to experience.

Casatiello

sponge
1/2 cup flour
1 tbsp yeast
1 cup Luke warm milk
1.) Stir ingredients together to make a pancake like batter, and cover w/ plastic wrap ferment 1 hr

Dough
4 ounces salami or other meat(bacon, pastrami, presiudo or pepperoni or combination)
3 1/2 cps flour
1 tsp. salt
1 tbsp. sugar
2 large eggs slightly beaten
3/4 cup butter rm. temp
3/4 cup shredded or grated provolone cheese

2.) Dice meat into cubes and simmer in frying pan save excess fat
3.) Stir together flour sugar, salt with a spoon add eggs and sponge to mixture and mix w/ a spoon or paddle attachment on low speed until ingredients form a coarse ball add milk or water to pick up excess flour mix for 1 minute let dough rest 10 minutes. work butter into dough adding one piece at a time stirring aggressively, continue mixing with spoon adding flour as need until dough forms a tacky mass takes about 12 minutes.
4.) Add meat pieces stirring them into dough until evenly distributed, then knead cheese into dough until evenly distributed, dough will be soft and stretchy but not sticky. Add flour if sticky until stretchy.lightly oil lg. bowl transfer dough ball to this bowl rolling it around till all sides covered. Cover w/ plastic wrap.
5. Let rise for 90 minutes until 1 1/2 in size.
6. Remove from bowl leaving as one big piece for one lg. loaf or split for two smaller loaves, I used a spring form pan to cook mine in as a lg. loaf but you could use 2 small oiled round casserole dishes for two loaves or one lg one for large loaf.

Sgt.Peppers Stuffed Peppers











SGT.PEPPERS SPICY STUFFED PEPPERS

1. Cook 2 cups of you favorite rice on stove top.

2. Cut tops off of 6 bell peppers colors of your choice the more colors the more festive.

3. Remove all seeds from inside of peppers, and than fry half of a diced red or vidalia onion and scallions if desired, dice tops of peppers in previous step and add to onions, cut peppers in half and arrange in rectangular cooking dish.

4. When hamburger is finished cooking, mix together onions, peppers , scallions and rice

5. Know add 1 can of hunts tomatoe sauce in the can and thouroughly mix everything together and simmer for 5 minutes.

6. With a big spoon stuff all you peppers and add remaining filling in between all unfilled space of glass cooking dish.

7. Preheat oven to 375 degrees cook for 1hrs. and enjoy this is a wonderful treat on a cold winter day.
